  • The Magic Inside The Bottle – How Tequila is Made  By : John Smith
The process of finding the magic takes a long time. It all starts with a ripened blue agave plant. This ripening usually occurs 8 to 12 years after the seeds are planted. The leaves are then chopped away from the core of the plant by a tequila farmer, a ‘jimador’ who looks to see if the plant is ripe. This is a tedious process because if the plant is harvested too soon, there will not be enough sugars, too late and the sugars will have been used to form a once-in-a-lifetime stem called a ‘quiote’ which produces the seeds.
  • The History of Tequila.  By : John Smith
The history of tequila began with the Aztec people making a fermented beverage from the agave plant which they called octli (later and more popularly called pulque). This occurred long before the Spanish arrived in 1521. Then, in the 16th century when the Spaniards arrived in Mexico, the Conquistadors brought the process of distillation with them and the people of Tequila were quick to put it to good use. They knew that the blue agave plant contained sugars that could be fermented. When the Spanish conquistadors ran out of their own brandy, they began to distill this agave drink to produce North America's first indigenous distilled spirit . By fermenting and distilling the sweet sap of the blue agave plant, they produced liquor with a distinctive taste.
  • TEQUILA: The many types of magic in the bottle  By : John Smith
Real Tequila can only be produced in the Tequila Region of Mexico. As the brand ‘tequila’ is controlled by the Mexican government, it must comply with the strict Mexican government regulations. To make sure that tequila is genuine it has to be produced according to the strict standards. It also must bear the official standard, NOM (Norma Oficial Mexicana) and the Tequila Regulatory Council’s monogram (CRT) on the label. All Premium Tequila must be adorned with the ‘100% Agave’ marking on the label as well. Each approved tequila distiller gets its own NOM that ensures that the product complies with the official Denomination of Origin. Not all tequila is created equal and if your label does not contain this information, it is likely that you are not drinking tequila.

  • Tequila cocktails  By : John Smith
Tequila - a fine, complex liquor that is best when sipped slowly. Traditionally it is served warm in order to appreciate its wonderful flavor. Most tequilas are served in a "caballito", a 2oz glass made exclusively for this purpose. Blanco and Reposado can be served with "sangrita", a tomato and orange juice mix with salt and chile. Añejo is served in a snifter so that its aroma is fully appreciated. The tequila shot with lime and salt is made from Hollywood and few people drink it that way. Some people do put lime juice in the tequila or bite the lime before sipping it. It is a matter of taste. You should choose the right tequila for your cocktail and enjoy it.

  • “Keeping Austin Weird” - a Proud Legacy  By : Marti Kougel
“Keep Austin Weird.” The unofficial slogan of the city has different interpretations to different residents, but most would agree that not being “normal” is one of the things we cherish about Austin. Ironically, what began with a grass roots movement to support the local businesses got trademarked by a marketing company to sell tee shirts and ball caps. In fact, they did such a good job of marketing and profiting from that slogan that other marketing companies in other cities picked it up and pretty soon, it became “Keep (fill in the blank) Weird.” But like cookie-cutter malls and chain restaurants that look exactly the same no matter what part of the country you happen to be in, we’ll let the big companies make a profit here just like anywhere else. To a lot of us, “Keep Austin Weird” isn’t about a tee shirt, it’s a reminder that we live in one of the most unique and original cities in the country, and we never want to lose that.

  • A Visit to Austin’s Ethnic Bakeries: A bite-sized tour of the world without leaving town  By : Marti Kougel
What do you do when you mix a traveling jones with a sweet tooth? For those with the time and means, a trip around the world probably sounds pretty good. If that’s not practical, you can do the next best thing – stop by one of the little local bakeries and pick up an ethnic treat to go.
Sweets are a traditional part of celebrations in almost every country in the world. Many, if not most of the favorite ethnic desserts we’re all familiar with are steeped in lesser known traditions and cultural heritage. Many of the bakers that own these local shops brought their experience and talent to Texas from other countries, and the culture of their native land is often reflected through the ambience as well as the food. Other shop owners are descendents of immigrants, and the confections they make are based on old family recipes that have been passed down through the generations. Either way, we get a little taste of the old country with every bite.

  • From the Canary Islands to San Antonio – the Origins of Tex-Mex  By : Marti Kougel
As Americans, we all share a common bond of nationality. But one of the things that make us unique in the world is that we all have a regional heritage as well, each reflecting the history and culture of the indigenous inhabitants and the old world colonists that settled there. Those regional differences are most obvious in the dialects and cuisine that can change dramatically just by crossing a state border – you can drive from Houston, Texas to Mobile, Alabama in one day, and encounter a distinctly different dialect and entirely different type of menu each time you stop to eat.
